Definition

The protein-rich foam that forms on top of a consommé during clarification, made from egg whites and ground meat that trap impurities. It looks disgusting but performs actual magic.

Example Usage

Don't break the raft while the consommé clarifies, or you'll ruin six hours of work and have to start over with expensive stock.

Origin

Named for its appearance as it floats on the surface like a raft on water

Fun Fact

A properly formed raft can clarify cloudy stock into a crystal-clear consommé so transparent you can read through it.
